Ingredients
- 500g chicken breast, sliced
- 2 tbsp green curry paste
- 400ml coconut milk
- 1 eggplant, cubed
- 1 red capsicum, sliced
- 1 cup green beans
- 2 tbsp fish sauce
- 1 tbsp brown sugar
- 1 lime, juiced
- Fresh basil leaves
- Jasmine rice to serve
Instructions

Heat half the coconut milk in a large pan

Add curry paste and cook for 2 minutes until fragrant

Add chicken and cook for 5 minutes

Add remaining coconut milk and bring to a simmer
