- 1kg pork belly
- 2 apples, grated
- 1/4 cup apple cider vinegar
- 1/4 cup brown sugar
- 2 tbsp soy sauce
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- Salt and pepper
- Fresh thyme

Score pork belly skin and season with salt

Roast at 220°C for 30 minutes to crisp skin

Reduce heat to 160°C and roast for 1 hour

Make glaze: combine apples, vinegar, sugar, soy sauce, garlic, and ginger

Brush pork with glaze every 15 minutes for last 30 minutes
