- 1.5 cups arborio rice
- 300g mixed mushrooms, sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 cup white wine
- 1.5L hot vegetable stock
- 1/2 cup parmesan cheese, grated
- 3 tbsp butter
- 2 tbsp olive oil
- Fresh thyme
