Chicken Parmigiana

Ingredients

  • 4 chicken breast fillets
  • 1 cup breadcrumbs
  • 1/2 cup parmesan cheese, grated
  • 2 eggs, beaten
  • 1 cup flour
  • 400g tomato passata
  • 1 cup mozzarella cheese, grated
  • Oil for frying
  • Salt and pepper
  • Mixed salad leaves

Instructions

Flatten chicken breasts to even thickness

Set up breading station: flour, eggs, breadcrumbs mixed with parmesan

Coat chicken in flour, then egg, then breadcrumbs

Heat oil in large pan and fry chicken until golden and cooked through

Place chicken in ovenproof dish

Top with tomato passata and mozzarella

Bake at 180°C for 10 minutes until cheese melts
